Amazing Light April 9, 2010

There is an essence  of light on the cape and it is hard to explain.  There truly is a “cape light”  It is not specific to a season, I have come across it at various times in the year.  It is amazing.

Traveling around Brewster and Dennis on RTE 6A earlier this week photographing all that was out in bloom, I came along Sesuit Harbor and Cold Storage Beach in Dennis.  I am not sure if I have ever been to this harbor and  beach. They are one the northside and  I found them easily off of RTE 6A.  The light on RTE 6A wasn’t exciting me so I traveled to the ocean and found such gorgeous light.

It is a light where the ocean meets the horizon and the horizon meets the sky.  It is so blue and deep in color and yet there is glowing light that reflects  on the sand. It is wonderful to experience and it is usually fleeting.

I love coming across this light and love when my camera is with me.  I hope you enjoy this Cape light……

Super Easy, Super Yummy Macaroons! March 30, 2010

So I love coconut and according to the today show today, you either love it or hate it.  I have known both types of people. So, I set out to make a yummy macaroons that wouldn’t bust my waistline especially if I decided to eat the whole plate.  I got this recipe from Weight Watchers and the only thing I changed was that I couldn’t find unsweetened coconut at the local stop and shop, so I used the sweetened kind and left out the sugar.  I hope they turn out to be the same “points” value, but you might want to count one as 2 points just to be safe.

Super easy and super yummy….a treat to serve your Easter guests!!

Chocolate Dipped Macaroons

Preparation Time: 10 min

Cooking Time: 20 min

Terrific for Passover. But easy and delicious enough to make all year long.

Ingredients

3 large egg white(s)

2/3 cup(s) sugar

1 1/2 tsp vanilla extract

2 1/2 cup(s) packaged shredded coconut  , unsweetened

3 oz bittersweet chocolate, chopped into small bits

Instructions

1. Preheat oven to 350°F. Line one or two large cookie sheets with parchment paper.

2. In a large bowl, whisk egg whites with sugar. Add vanilla and coconut; stir to combine.

3. Scoop up a level tablespoon of batter and form into a ball with your hands; repeat with remaining batter. Place each ball about 1-inch apart on prepared cookie sheets.

4. Bake until tops just start to turn light tan, about 15 to 18 minutes. Remove cookies to a cooling rack for about 30 minutes.

5. Place chocolate in a double boiler or heavy pot; melt over low heat, stirring occasionally (do not allow to burn). Keep chocolate warm and pliable as you dip tops of cookies into chocolate. Place dipped cookies on a metal tray evenly spread apart so they’re not touching; freeze until chocolate sets, about 20 to 30 minutes. Yields

1 cookie per serving.

 

Spring has Sprung! March 16, 2010

It looks like this year we may actually get a Spring this year on Cape Cod. (typically it doesn’t seem so!)  Warmer unseasonal weather and lots of pretty spring flowers popping up everywhere makes the Cape a wonderful place to be right now!  Only time will tell if it all keeps up, but let’s keep our fingers crossed and enjoy what we have !

I photographed a cute shabby chic home/cottage earlier this week.  Just a hop jump and skip to Nauset Beach this four bedroom cutie is a great second home so close to the Lower Cape Action. This home has large yard, one car garage and wonderful “great room” type living space in the back of the home with a wall of windows and gas fireplace.  This room clearly is the heart of the home. Making Winter Fun on Cape Cod February 12, 2010

This winter we have had a lot of snow.  Some winters we hardly get any but this season we have had our fair share!  Even when the mountains were hoping for a few flakes, we were able to get it all down here.

In the summer time, there are so many outside thing to do, right outside your door, but here we tend to keep inside in the winter if only to begrudging shovel our driveways or take the kids out to a tiny hill in the yard for sledding.

This past summer,  I picked up two sets of cross-country skis at a yard sale.  Seems like there wasn’t a lot of opportunity from the previous owners in the past to break them out as the both were in amazing shape.  Last December, I thought long and hard about pulling them out when we got the 16 inches of snow but alas, the snow came and went and there they sat.  I still regretted that and secretly prayed for a little more snow.

This time I was determined to break them out and give them a whirl.  With the 8 inches we got earlier this week, this was my chance!  I pre-flighted them yesterday in the yard and all seemed to be good.  I called my friend Wendy and asked if she would like to join me on my venture.  After all I had purchased the two complete sets and have only one set of legs.  She agreed and was excited to meet!

Off we went to the Sandwich Hollows Golf Course where they allow you to sled their one awesome hill, snow shoe and cross-country ski.  It was a balmy 32 degrees and a slight wind was blowing.  The sky was amazing blue color that only occurs in the winter time.

We started out and mistakenly hit a small hill and needless to say, we both landed on our butts!  But we got back up, found the straight away and proceeded to carve out our track.   It was so peaceful and the light was amazing.  We completed our loop and skied it two more times.  We finished about an hour and a half later with a great workout under our belts!  The rest of the day, my mind felt clear and I had a great sense of energy.

I hope when it snows where you are, you will go out and embrace nature and don’t let the season pass you by.  Winter can sometimes seem long and dark but, summer  will be here soon enough, enjoy every day you have!

Dan and Diane January 24, 2010

Dan and Diane were married yesterday at the charming Candleberry Inn in Brewster. They were married in the parlor surrounded by close family.  After the ceremony, everyone  had a lovely meal in the inn’s dinning room. The event was orchestrated  perfectly by Laurel Hartman of Laurel Consulting and was an intimate celebration of their love and commitment to one another!  Congrats Dan and Diane!  I hope you had a great time at Disney!!!
